Some of them have what appear to be saddles with spikes (lets just say you dont want to sit on them). Now, what would be the purpose of having such a sign of defiance if another race didnt use such saddles to ride?

There are just some things, many many things in fact, that are deemed insignificant or irrelevant to the game and simply phased out of conscious content rendering; they are "there", just never "noticed".
Horses in Tyria are simply not important enough to be rendered.
Then there's the other point -
If Anet includes horse models/mobs/interactables, the question would inevitably come up "why can't we ride them?"
It already does even when there's no horse in visual existence in the game to remind players.
But from this, I'd deduce that Anet has no wish to entertain such requests for now.

*side note* map travel has to be learned in the quest in gw 1 map travel inventor it was possibly a skill not every one had.... well ummmm unless... Mauban was a bit.... lets say slow
