More on the original topic, I don't see ANet doing this. If they had wanted to enable loot dropping in your inventory automatically, they would have. Since they intentionally implemented a system where you have to approach the drop and act to pick it up, I don't see why they'd implement a more complicated system (a pet that picks up loot for you) to circumvent it.
Or maybe the thought hadn't occured to them, hence my suggestion.
Heck, you could even have it as a 'dog collar' convenience item that can be bought from the item shop. Then the item could be equipped on a mini, giving it the ability to pick up loot. Thus turning a static mini that just follows you around into a dynamic mini that runs around the area to pick up loot that's dedicated to you.
Personally I do not see it as a more complicated system as pathing scripts are already in place. So instead of a ranger pet rushing off towards a living target and 'press' combat abilities, you'd have a mini rushing off to a dead target and 'press F'
