I need some recommendations. What I'm looking at is this:

* Slow-killing. I'm not interested in 1,5 seconds thief burst instakill anti-game builds.

* Survivability when outnumbered. Some skills are good for defense but only when 1 on 1. I want to be able to 1v2, 2v3, 3v5... you get it.

* Versatility. Not interested in one-trick professions.

* Ability to prevent the enemy from fleeing as a bonus.

(This is for WvW but I pick smaller fights.)

I assume Guardian and Necromancer would fit here. Anyone else? And how do they compare?

I'm running this build on my guardian atm and I really like it!

Can 2x1 against two non full glass cannons no problem.

This build is for 1x1 or even 2x1. If you want to 2xY or 3xZ you should get a staff for your secondary swap and change the trait Monk Focus for Altruistic Healing.

I'll throw in a vote for engineer, it's a strong bunker build, has tons of versatility, AoE hard CC and damage to take care of multiple enemies, its movement control is top tier and the best part? EXPLOSIONS.

Pistol/Shield engineer with your share of kits. Problem will be that conditions are still quite limited since the Explosive Shot nerf.

Mesmer can both spike and kill slower, survivability is amazing. Staff and sword\focus (or another OH) gives great survivability and nice dmg\pressure. I usually can take 1v2 (vs lv80s) and sometimes 1v3 even. Me and 2 more mesmers decimated and utterly destroyed a 8 man group, mostly of lvl80s just a couple hrs ago..
Anyway check it out :)

There are really only two classes which can hold some seconds against multiple enemies:

* Guardian bunker build
* Engineer tank build with big ol bomb

All the other classes are only mediocre when they use highe defence values and go down faster.

A well-focused necromancer seems like it'd be good for you. Played well they are pretty invincible but it does take a long time to kill things, great for point defense but you'll likely need backup to kill anything in a reasonable amount of time. I'd recommend a bunker guardian but they are so grossly overplayed as it is.

I think one of the best point defender currently is the engineer with big ol bomb, you can really give a small group a lot of trouble with higher defence and especially with skills to kick them back and avoiding incomming dmg. But thats for spvp. If you encounter melee glass cannon builds its gg of course, their dmg is over the top.
