Hey guys--I'm only 24 with my Guardian, but I'm starting to want things to be more challenging. Rather than plowing through everything with my GS, I'd like to start tackling stuff a couple levels higher.
Any recommendations on weapon combos and utility skills for this?
So far, I've actually been finding GS is (sadly?) pretty damn good for +1-2 level mobs, but I'm hoping there are some other ideas.

Staff.
Always staff.
Guardian is not guardian without staff.
Taking on higher levels is generally easier with ranged weapons, so a scepter set might work, too.

I often level off tagging higher level d/es. For guardian I prefer Scepter due to greater range over Staff and faster attack rate.

Also, staff. I haven't even used one (except to unlock the abilities). Guess I'll need to try this out...

Staff is great. Do you like might? Do you like swiftness? Then you like staff.
d/es = dynamic events.

Besides the fact that I find ranged being a tad boring, I solo leveled using GS/Sword+Focus. Blinds kept me alive, that is: GS[2], Sword[2], Focus[4], Justice is Blind (in conjunction with Renewed Justice). Also, blinds can apply vulnerability if you use Blind Exposure.

Hammer and Great Sword.... staff... meh, the animations kill it for me on the staff... All other weapon animations look great, and staff looks like a six month old baby trying to swing things. Sigh.

I was always able to do stuff 4-5 levels above me with hammer. Nearly constant protection is awesome

Been playing a bit more and went with mace/focus and finding it pretty great. I imagine that once I hit 40 and get the next tier of Radiance (kills reset cooldown of Justice), it'll be even better.

Hammer + Sword-Torch is my favorite set. Good mix of ranged and melee abilities, with some control in case things get bad. Plus it looks very NICE.

When traited right (admittedly, best post-lvl 40), the hammer is awesome. Perma-protection is always nice, and constant reapplicaitons of retaliation. I'm building toward a hammer AH build right now, and even at lvl 40 I feel pretty safe wading into mobs a couple levels higher than me.
Check this.
