If it helps, when I played WoW I played the shaman mostly. I also played a paladin.
I love pretty much all of those equally. I just can't decide. What are pros and cons of each?

Idk, when I compare playing my ele to other professions like ranger, warrior or guardian I just get so bored. If you're looking for an easy time I'd pick guardian but I personally like the challenge of fully utilizing my eles capabilities =3

I have deleted well over 200 levels of characters. A few 30s, hand full 20s, and countless pre 15s. Many of them the same classes over and over. My first character I thought I was serious about stalled out at 30. It was a greatsword ranger. Huge male norn, huge sword, huge bear, got boring. After a few weeks of playing other alts and just floundering I decided if I deleted this ranger (I had no spare slots) and remade a human female maybe I was just tired of looking at him. I did this, got her to 30, stalled again (she was Lbow/Sbow). More floundering and finally I went with my then 22 thief. At least she ran fast (signet of shadows) and could stealth through content to get on with the game. I managed to get her to 60 and thought all the way I had my winner.
She stalled. Next I was on a warrior. I forced myself to get a character to 80, and this was it. There was some fun along the way, but by now it was just an effort to get a toon through the game.
After that I got the thief to 80, Then I forced myself at various times to get my necro to 80. I went back to the ranger and forced myself to get her to 40. At this point I found it so boring. I decided to try other weapons and hit upon Sword/Warhorn. This totally changed my view. This combination for melee was proactive, now about proactive (dynamic) vs static.
I loved my thief because when she was in melee I could be proactive. I didn't just mash buttons and watch her anmations. I actually watched the foes. When they went to attack I would use Deathblossom proactively to attack through them and avoid their attacks. Much like dodging, this made the character feel very dynamic even though it was melee.
With the Sword/Warhorn Ranger it was much the same. #2 and #3 sword allow much proactive play.
I can't bring myself to play an Engineer. I find them lackluster to level, I am sure they are fun at 80. I can't bring myself to level an Elementalist, I am sure they are fun at 80 but so squishy to level it hurts. This leaves Guardian and Mesmer for me, and I am struggling right now to decide. Mesmer will be slower to level, they don't have as much going for dynamic events (my preferred levelling avenue). However Guardian is so similar to Warrior and neither Guardian nor Warrior are as dynamic as Thief and Sword Ranger. Warrior and Guardian are more static, standing in place and just attacking. Even Staff or Scepter Guardian is sorta stale, Bow/Rifle Warrior isn't that fascinating.
Long response, maybe some where in there you get an idea of what you are looking for while levelling. Elementalist may be great for someone, Engineer may be great for someone, it's all about how YOU find a profession interesting. It's about exploring avenues until you find that something that makes you smile while you progress through the game. For me if I can't find that smile factor, I can't keep my interest going.

Are elementalist and mesmers diverse in style? Obviously elementalist is, but is the mesmer?
Also for the ele's squishiness, can't you put traits so that it can take hits?

I started the game off with a necro, got to level ~5 and deleted it. Rolled a Ranger, got to 3, and was fed up. So I made an Engineer. LOVED it, until I got to my first dungeon. I'd been running Turrets, and just how bad the where became ridiculously apparent before the first boss. So I rolled a warrior out of frustration. After about 15 levels, I realized I was enjoying it more than my Engineer, but didn't want to give up a lvl 30+ character. So I was asking a friend, and he gave me that advice. He explained that instead of picking a 'main', if I just played whatever felt good that day, then eventually my choice would just show itself.
Lvl 80 warrior, and I loved (almost) every second of getting him there. (Side note: am I the only one who think the 50s sucked?) I'm now leveling a thief on the side (REALLY want to see what he can do in WvW!), but the second an event happens or someone needs help I'm back on my warrior and ready to go.
My main is defined by being my main.

Best bet is find which profession/race YOU find the most fun. I mean if I asked someone to help me decide what my favourite meal was and they said brussel sprouts with cabbage and raw meat, I'd starve

Back on topic, the question about Elementalist or Mesmer and traits. Here is the skinny on these 2.
Elementalist squishy unless you rock some sort of earth defensive hammer build or something. I passed on trying this because in the end why would I want to level an elementalist using melee when I could just rock a melee and win all the way around?
Mesmer. The trouble with Mesmer is if you do dynamic events they really lose out, especially over an Elementalist who has very good AoE for tagging.
Now you have to look at levelling pains and end-game. If your end game is dungeons and the PvE like, you would probably most enjoy the Elementalist, even though they are squishy (Mesmer has better survival due to clones/phantasms and their RIDICULOUS ability to be in a downed state for as long as they want, virtually). If your end game is PvP/WvW, most will tell you Mesmer is the clear leader of the two.

and not let every mop get killt by a swinging warrior that is already to OP in pve
ele to low deff to low dps you need to run run dodge dodge and try to kill a mob very sad play style
mesmer you first clones to ZERO damege wtf what the use of that second warlock have nice damege but his atack is very very slow o.O
not much use of him to so far i see most clones are not that usefull most die very fast so you always fight alone in pve
orther hand the mesmer is very good ad the mist np with that but pve -.-
necro very broken atm and his demon pets are very sad to weak and die in a few hits
beter play ranger his pets can take alot of hits so you always have some1 to tank for you ^^
its seems Anet made the 3 scholar classes beter for pvp then pve i hope the change that so pve wil be beter to

NO earth fire air are all damage in the sence that you run through all of them to land combos.You wont feel squishy if you kill 3 mobs in less than 10 sec without even get hit.Just combo the shit out of your attunements and swap to water when things get tricky.
Also run the 2 summons (utility and elite skills) if you want to have less pressure on you.
But whoever says that for pve ele (or any class) is too squishy/weak he is wrong..Maybe some classes have less aoe thus cant tag in DE that good but thats all

If you played a Shaman or Druid I would imagine the Engineer to be more your style, their versatility and sheer number of fun toys to kill enemies with is no joke! But I guess you've already tried it and not enjoyed it, so I think I'd say that from the classes you mentioned go Mesmer. They're a very unique class that require quite a bit of finesse to get the most out of them.
