You have basic attributes such as Power, vitality, precision, toughness, etc which cannot be changed directly but you can pretty much pick and choose which stats you want with your gear. There are a multitude of gear types (rampager's, shaman's, cleric's, carrion, berserker's, etc.) throughout the game with a different stat mix.
Added to gear stats you also have 5 trait trees which will give you an extra way to customize your playstyle and a way to further customize your stats. The trees and exact bonuses vary per profession so it's something you should probably research a bit

What is crafting and how do you craft?
How do you change what skills you have in the skill bar?
What are trait trees and how do you unlock traits in them?
What do you get each time you level up?
thanks for the help, i am a total noob

Just search whatever you need info about (eg. crafting or traits) and it should tell you everything you need to know instantly so you don't have to wait around for people to reply here!

1. Crafting is, well, crafting. Crafting is where you make various items that can be used in the game. There are eight crafting disciplines, each of which make different types of items. All the information on crafting you will need is available here on the Wiki.
2. There are two types of skills. Skills on the left (1-5) are based on what weapons you have equipped, and the only way to change those five skills is to equip different weapons (double click on them in your inventory, or open your Hero panel and drag the weapon to whichever slot you'd like it!). Skills on the right side of your HP circle are called Utility skills. You can get more utility skills by opening your Hero panel, going to the second tab on the left side, clicking the Slot Skills tab and browsing the skills available. You need Skill Points to buy Utility Skills. You earn 1 skill point each time you level up (I think that starts at Level 5). Once you buy Utility Skills and are above level 5, you will be able to click a small Up arrow above a utility slot and select which skill you'd like to equip there.
3. Traits affect your stats and can unlock various buffs and bonuses for your character. Each profession has five trait trees specific to its profession, but the basic stats are all covered (although in a variety of ways). You can put up to 30 Trait Points into one trait tree, and you can have up to 70 total trait points to use as you wish. You unlock trait bonuses every 5 points you put into a tree. When you have 5, 15, and 25 points in a trait line you get automatic and self-assigned bonuses that you cannot change. When you have 10, 20 and 30 points in a trait line you can select a bonus out of a few options. Information on traits is available here.
4. When you level up before level 5, you don't get anything. When you hit level 5 you get one skill point, then you earn one skill point for each level you reach after that. You will earn your first trait point when you reach level 11, then you earn one trait point for each level after that.

You can put sigils on weapons. They don't actually improve the weapon's stats as such. You can see what various ones do here:

As for crafting...I probably wouldn't be able to describe it very well. You need to refine materials before you can use them. You make bits of armour and an insignia, then go to the discovery tab and put them all together. SO for instance helmet casing, helmet padding and a precision insignia.
