I have noticed all of the skins for "offensive" ascended back pieces are quiver skins, which is cool for ranges but what about everyone else?

Are these the only choice of skins for offensive gear? It looks silly on say a guardian or other professions, warriors can get away with it, thiefs, rangers but just looks silly on others.

Offensive gear is actually not a good thing for rangers. The only way in which the offensive slot differs from the defensive one is that you need the more expensive infusions to fill it. For example the agony infusion from FotM costs 225 tokens for the one that you can put to both slots and 150 tokens for the defensive one. There is no such a thing that could only fit in the offensive slot, afaik. Thus you are better off with the defensive slot.

If you want offensive upgrade stats in the slot you have to have an offensive quiver....

Just annoying they only gave us one skin to choose from for offensive one's.

Be patient. They answered the call for quivers/backpacks with the first ascended gear. Now we'll see other types with next group of ascendeds.

I'm sure every X Legolas X  ranger is making one as we speak. I am going for the book. I seen NPC's with them and always wanted one

The problem is if they release more offensive ascended skins later when everyone has the quiver already, you now have to farm another ascended item just to get the skin you want.

For such an invested item we should of been given more choice than just quivers....
