I've been playing for a fair while and have a level 80 war, and a thief that's about 2 days work away from being done as well, and I was wondering what profession is best for general play? (solo farming/leveling up, dungeons, fotm etc) any links to actual builds would be much appreciated

Are you asking, of the two you mention (warrior and thief) which would be better for overall play across the entire spectrum the game offers?  You aren't very clear on this.

Of the two you mention you have, Warrior is the most forgiving if mistakes are made or good skill/ability to play one isn't available.

I can only assume this was the meaning behind the question.

Horrible question. Everyone's answer will be subjective, because there is no right answer. This question is asked often enough, that had you spent anytime searching for it, it is likely you would have found several discussions on it.

The answer is that there is no right answer. Most players can give you 5 builds for every class that many will fill fit your general criteria.

Was looking for a new character and wanted to know which one people would advise.

Like the person above said, nothing is best.  You already have one of the most balanced professions in the game, Warrior.  Pick something you find interesting.

No need to be PC. Most groups will want a warrior over a thief. You can do whatever you want when playing solo.

Anything works for solo/farming/leveling, so pick a dungeon build from the PvE warrior forum to be ready for everything.
