For the real detailed breakdown of dps, there are lots of threads still scattered around with the full answer, but here's the tl;dr version for the classes you mentioned:

Warrior: No are longer the DPS kings, but they are still very solid dps in just about any situation.  Basically, they're reliable high damage dealers in pugs, but hardcore speed run groups wont stack 3-4 of them like they used to.

Thief: Very high single target dps.  They clear trash well with S/P and D/D is one of the highest dps builds.  They're great to have for certain dungeons like CM where stealth speeds up a run a lot, but they're still good everywhere else too.  Still squishy as hell though.

Eles: Eles are arguably much the DPS kings in most situations now.  If you're going through a dungeon where you can stack bosses against a wall, then FGS rips them apart.  Lightning hammer is great and fire staff builds will also bring top notch damage in a lot of situations while making fire fields readily available.

Hmm...seems like the thread is still pretty outdated.  Thief build still doesn't have Revealed Training and I believe Nike's switch to endorsing a pure GS build for warriors now as the highest DPS.

The best build is still pretty much the same, except if you're using D/D, then it's worth picking up the new DA talent for power when revealed.

However, the "best" build will depend a lot on your situation.  If you're fighting trash, then S/P is often best with talents like Combined Training and Combo Critical Chance.  When you get to a boss fight, though, you'll want to switch to D/D most of the time and drop the those talents for ones that fit the dagger better (i.e. dagger training).  On some fights, you'll need to stay ranged with P/P and will want pistol traits.

It really just depends on how min/max you're willing to go.

Looks like an unexpected change to Empowered Mantras broke the mesmer build listed. =P

I'm far from a pro at mesmers, but I'm guessing the high dps build is 0/5/0/5/4?
