Quite true.
GW2 suffers from a major PvE polish problem that I don't think will ever be addressed - and the dungeons they have worked on after launch were temporary aside from Fractals.
That's stupid.

Very much underplayed, but I'm happy enough with the looks considering it's a plant-head:
Spoiler
That's a.. Busty Sylvari. o.o

The colors look very very good. It's hard to make a good-looking Sylvari

Have you ever done raids as a healer? That screenshot is from the PoV of a druid healer - they have the raid members open, so can see health's, has threat metre's up to ensure they do not grab aggro from the boss/mobs, also have a buff tracking addon open as well. I'm not 100% sure what the lower central addon is tho - the one right underneath a HoT timer tracking addon.  Not sure if the image is a joke, but it's a similar/typical screen I have seen from ppl who used to heal the old 25 & even older 40 man raids - has many of the standard type of addons used & needed by raid healers (at that time of raiding).
They have 2 sets of raid frames active.
There's no way to excuse that sort of waste of screenspace.
They're also playing on a low resolution. They could scale the UI elemens down by a ton to have more room to work with.

Good WoW UIs are clean and show all needed information.

Though, it seems all the signs point to EverQuest Next not being that great of a sandbox as they advertised before they ramped up their efforts to promote Landmark more in the last couple months.

So I fear if one truly wants a sandbox experience, Landmark will probably be the better pick, while EQNext will remain to be a very theme park focused experience.
I wouldn't quite use 'themepark' for Next - but it isn't proceadurally-generated; and has hardwired 'quests'.
The use of the Voxel Farm engine alone means it will be a lot easier to develope content on a weekly basis, while new content with new art assets are added on a more bi-monthly basis.

I have a feeling EQN will do GW2's 'living world' thing right.

If it's 'sandbox' in the same way that Age of Wushu is a sandbox, I'm all for it.

15 acrobatics
Signet of Agility
Shortbow
Pistol offhand

Your survivability issues have been solved.
If not, react quicker/be more attentive

Every Thief build should have Shortbow. It's too good to not use. There's really no argument that can be made against using Shortbow in every build.
You'd probably have more success with a heavy 25 Deadly Arts build, too. Shortbow-4 and MH-Dagger-1 applying Weakness to everything you're fighting makes everything easy.

Aside from the poison-also-applies-weakness trait, 25 DA also gives Power - and like everything else in GW2, solo-PvE builds work best with as much DPS as you can pump out.
