What would be a realistic number? 5-6k/s?

Yes, somewhere around 5,5-6k/s is probably most what you can get now under normal circumstances - as long as you land all of your backstabs (which is unlikely in real combat situations), keep up with the initiative and don't have to retreat because of HP losses.

In PvE/WWW you can get more crit damage, over 100%, compared to 5x% achieveable in the Mists. It means that in open world you should backstab with this build for 8k-8,5k in crit, which is pretty much a standard value for a zerk thief without food and large stacks of might and vuln.

It still, however, won't be sufficient to elevate the dps to 7k/s level.

If you want to see some high numbers, please watch this movie. It's a warrior POV of a paid tpvp game, so the opponents represent a higher level of skill, unlike some random hotjoin spvpers. Nevertheless, the warrior pulls some awesome high numbers. You seem great at math, perhaps you could calculate how much damage he does by using all his cooldown skills, utilities, F1 and autoattack (equivalent of thieves' CnD+mug+backstab+heartseeker+venom+elite+signet+autoattack).

The odds of anyone reacting fast enough to avoid CnMugD -> backstab are fairly low. We've been over this before. 1/2 second with internet latency and the limits of human reaction speed make it borderline impossible to stun break and dodge/invuln before backstab lands.
If you see a thief coming - and you should see, a proper identification of incoming threats is an element of "skill" - you can expect what will happen. It is easy to estimate 900 range, you should be able to time your dodge/invul/other defensive moves. At least I can.

I hope you do realize this video is 3 months old and many, if not most, of that "OMG op nerf it" moves are no longer possible to be executed.

Thieves on the other hand just have to get into steal range, CnMugD -> backstab for 27k in 1/2 second. That's broken.

That player did nothing to counter the combo. He was caught off guard and unprepared. Hence he deserved to eat every piece of that damage. A simple dodge after being affected by Blinding Powder could save his life and force that thief to run away.

Wrong, it's not just getting into steal range. The thief must have best damage food and full stack of weapon buffs on himself, as well as specific equipment with runes and sigils, traits and utilities, significantly reducing his defensive potential. The combo is hard to land, the target must be caught unprepared and standing still, because a dodge or a blind or etc will waste all this precious combo. In order to reach so high numbers, the target must have a condition before even the combo starts. Also a luck factor must be taken into consideration.

And it's not that every thief you meet in WvWvW deals that kind of a damage. Usually it's much lower and harder to land, because most people move around all the time.
