My votes go for S/P or D/P. Pistol offhand just brings so much utility. Enjoy blind-tanking mobs (without unshakable i.e. bosses and champs) you can get into the 5-smoke field (even "immune" dredge are not), and the headshot interrupt is always useful (for defiant stripping, interrupts and stopping channeled spells [like the inquest channeled stunlock in one of the arah paths - will save your buddies a lot])

For a second set I would say Shortbow. You already have weakness on poison as a trait, and you can even combo your own poison field from choking gas with a blast finisher - AoE weakness. The evade is useful and so is infiltrator's arrow, so much mobility. Trickshot and cluster bomb aren't bad either for dealing with a lot of enemies

Looks like your list is pretty good already. If you want a Solo/Roaming profession Thief is probably best, I play D/D Ele and it's very good at roaming and solo play as well. Mesmer is good at soloing but wow they are slow. (not many speed buffs)

If you're new to GW2, I would recommend the warrior for PvE.  Specifically the signet build utilising a greatsword, which should be easy enough to find in this forum.  It truly is easy mode.  Warrior is just more forgiving than the thief in PvE.  It has heavy armor and the highest base health pool, while the thief has medium armor and the lowest base health pool.  Equip your greatsword and 100 blades yourself to glory!

WvW upscales your toon, but you'll no doubt be under geared which makes a fair difference if you ask me.  You use your PvE toon and your stats get upscaled to what they'd be at lvl 80, BUT you'll be using whatever gear you've obtained on your character through PvE or WvW.  You only get to pick your gear in sPvP.
